We’ve got a busy week ahead of us, so quick and easy meals are perfect this week. Even when we are really busy, it’s important for us to eat as many meals together at the dinner table as possible. Hopefully as the kids get older, they’ll realize the importance of this to us and continue even when they get too cool for their parents.
Tuesday – March 21st (Elvis’ Band Concert)
We went out to eat at a local Indian restaurant (Elvis’ choice) and it was delicious. Even Kennedy was adventurous and tried a samosa.
Wednesday – March 22nd (basketball game)
Cuban Sandwiches & French Fries (recipe will be posted soon for the sandwiches)
Thursday – March 23rd (Parent Teacher Conference)
Chicken Empanadas & Gallo Pinto (Kennedy spun the globe for this week and landed on Costa Rica for our #spintheglobedinner)
Friday – March 24th
Chicken Stir Fry with Peas & Carrots – homemade teriyaki sauce
Saturday – March 25th
My husband and I are going to see Eric Church with some of our best friends. We are going to go out to eat while the kids get to spend the night at Grandma’s house!
Sunday – March 26th
The weather is supposed to be kind of crappy, but with it being spring time in Utah we have to take advantage of the weather.

Tuesday – March 28th (Community Garden Meeting)
Chicken Pasta Bake
I’m trying to clear out our pantry a little bit so we are having a lot of rice right about now. There is quite a bit of random canned goods in there and I want to clear them out ASAP.
