Meal Plan Mar. 11th – 20th

Today was more of a desk day for me than normal. I’m typically on my feet trying to get orders out as fast as I  can. I still did a little of that, but was also able to catch up on emails and run a couple of errands. Here’s a quick picture of my happy place: cup of tea, yummy candle, and a little greenery.

You never really realize how busy you are until you start writing things down on the calendar! The weather in Utah has been absolutely PERFECT, so we changed up our meal plan from the weekend because it was time to bust out the smoker. On Saturday night I made Black Bean Burgers using The Pioneer Woman’s recipe book. The recipe can be found HERE! They were amazing and I can’t wait to do it again. Then on Sunday it was day full of sun, cornhole, alcohol, and food. We had a couple of friends over and enjoyed the warm weather. So now that the busy weekend has passed, it’s on to our busy week:

Monday – March 13th (Take Elvis to concert for school)

Chicken Cordon Blue Pasta with Asparagus

Tuesday – March 14th (soccer practice)

Swedish Meatballs, Mashed Potatoes, and Green Salad

Wednesday – March 15th (basketball game)

Chicken A La King with Cauliflower

Thursday – March 16th (Kennedy’s 8th Birthday!)

Beer Braised Beef with Noodles & Steamed Carrots – Her Choice

Friday – March 17th (Taco Is Getting Neutered)

Corned Beef & Cabbage OBVIOUSLY!

Saturday – March 18th (Kennedy’s birthday party, Elvis’ soccer game, Kennedy has a birthday party to attend, RSL at home but we won’t be there)

Who Knows What We Will Have! We have to have days like this where the only option might be to go out to eat.

Sunday – March 19th (NASCAR)

I’m leaving this one open for now. If the weather was as beautiful as it was this last Sunday, we will be using the smoker and enjoying the sun!
